Most other lower carb versions of pasta are simply too weird for me. Although this isn't super low carb, it is a high fiber, reduced carb, reduced calorie alternative to regular pasta that my husband will actually eat because it tastes like pasta and doesn't have a weird texture. The only thing different is that it takes a few extra minutes to cook compared to normal pasta. The price is higher than normal pasta, but given the health benefits I think it's worth it. I have purchased the elbows and the penne several times. I have not tried the spaghetti noodles or the lasagna sheets yet though, so I can't say if the texture on those are good or not.
