Added diced tomatoes instead of crushed as it was all I had on hand and it turned out perfect. Definitely will be buying this again!

On a cold day or hot, this gorgeous tomato-based soup is a delight. A little lemon juice on serving can brighten it even more. This soup hits it all: delicious, comforting, and packed with good stuff. You can add beef or chicken if you really want, but it's just fine (and, I would argue, better) without meat. This mix is one of my favourites.
