Bright Citrus and Savory Chicken Delight
This soup is delicious, bright, and warming. I added about 3tbsp of chopped dill, and increased the lemon juice a bit to brighten up the flavour. It helps if you sautee the chicken/onion until all the chicken juices evaperate and the chicken browns a little. Would highly recommend!

Not lemony enough, less spices, dill possibly. Other wise delicious. I just made it work for me as a base. I still have half the spices for another batch out of the tube!!

Lemon chicken & orzo soup
This soup is delicious! I had no zucchini and substituted with sweet potato and it worked great! Highly recommend.

Excellent with some Modifications
I originally purchased this soup before reading the reviews. Glad I did, as I gained some excellent tips. I used sweet potatoes, instead of zucchini (I don't like zucchini). I also added double the lemon juice and some dill. I always add more meat (chicken in this case) because that's what I like, and I always use soup stock, not water. I cooked the chicken and onion together and then just added everything to my crockpot. Cooking on low for 8 hours - perfection!

So I love the Mitchell’s soup co soups, because I feel like they’re a bit like a ‘choose your own adventure’. I read the reviews before I attempted this one. I made it in the instant pot. I made changes per my tastes, and that’s what is great about soup. I started with a mirepoix (onion, celery, carrot), sautéed my chicken, used kale and potato instead of spinach and zucchini. Used chicken stock. Added a bit of lemon zest before pressure cooking, and added a bit more once done pressure cooking. Also added dill, juice of 2 lemons, and my orzo. Honestly delicious, light yet filling. Only thing is that I maybe should have added the kale a little later (it looked a little brown and sad, but tasted fine! Again, my alteration, so that was on me). I personally think this is probably a new favourite for me, it’s bright and tasty! I honestly didn’t add much seasoning aside from the fresh dill, lemon zest, and juice. Sometimes I feel I have to add a lot of seasoning to get the flavour it want. I do make changes to the recipes, but I love having the base ingredients all set to go, and I can swap my proteins and veggies around at will. Very happy with Mitchell’s Soups!
