Modified, but still great!
I switched the protein to chicken (instead of prawn), so I sauteed diced chicken in a bit of oil and set it aside in a bowl first. Then, in the same pot, I made the rest of the recipe. I added a jar of blue dragon thai green curry paste and sauteed with the vegetables, cooked in the instant pot for 23 minutes on soup, and then added half a bunch of chopped cilantro, 2tbsp of fish sauce, and 2tbsp sesame oil. I omitted the peanut butter and yogurt. Was delicious but quite different from the recipe as it was printed!
