Great stew - so easy to prepare. The recipe calls for parsnips, which I had to cook separately because not everyone in our family likes them. I would add a cup of diced turnips along with the carrots and potatoes the next time I make this.

Delicious and satisfying
The potatoes and brown rice break down a bit, adding a silkiness that turns the broth into gravy. Loved the seasoning. I used bison instead of beef, picked out the dried peas (thats just me being silly; I don't like peas), and omitted the parsnip (personal preference). Diced turnip or swede would work well instead of parsnip. So would diced red and green pepper. A few mushrooms, a little extra black pepper and chili flakes in my bowl, and it was nigh-on perfect. Very soothing, as stew should be. Very easy to prepare. If chopping veg is an issue (it can be with me), then diced frozen veg would work just fine.

Irish Stew?
First off no Irish person would have rice in their stew. Next it was terrible flavour. I can’t see by reading the ingredients but there was some overpowering spice(rosemary?) that ruined the overall stew. I tried to compensate by adding beef broth and tomato paste to dampen the stew but it didn’t work. I tried giving it to a neighbour but she declined in taking more because of the spice. Please revisit the recipe!
